1 large cucumber
1 bunch green scallions
1 (24 oz.) container cottage cheese
1/4 cup mayonnaise
salt and pepper to taste
1 packet artificial sweetener (optional)

Wash and score the skin of the cucumber by dragging the tines of a fork down the sides lengthwise.

Slice the cucumber into thin medallions, crosswise.

The scoring will make a pretty scalloped design in the dark green edges of the slices.

Chop the scallions, including the greens.

Fold the scallions, mayo and cucumber into the cottage cheese. Add salt and pepper and sweetener to taste.

Molly - been so long since I've had scallions with cottage cheese...this recipe looks delicious!

I like to cut up green onions & tomatoes and radishes and mix that in with cottage cheese.. YUM! mmmmm.. I may have to do that soon. It sounds good.
