Faux Mashed Potatoes

2 heads of Cauliflower
Smart Balance Margerine
Ground Black Pepper and Salt

Remove the leaves from both heads of Cauliflower and cut all into equal size pieces. Place dots of Smart Balance Margerine over the cauliflower. Place in microwave safe bowl, cover with a paper towel and place in Microwave. Microwave until Cauliflower is fork tender.

Place cauliflower in Food Processor until smooth, adding more margerine in necessary. Process until smooth and season with lots of black pepper. Add salt to taste.

Some options; Add some freshly minced garlic and some parmesan cheese to the processed caulflower before seasoning.

NOTE: If you usually boil or steam the cauliflower rather than microwave, you will need to mash all of the water out of the cauliflower or it will be to thin.
