Faux Mashed Potatoes

2 heads of Cauliflower
Smart Balance Margerine
Ground Black Pepper and Salt

Remove the leaves from both heads of Cauliflower and cut all into equal size pieces. Place dots of Smart Balance Margerine over the cauliflower. Place in microwave safe bowl, cover with a paper towel and place in Microwave. Microwave until Cauliflower is fork tender.

Place cauliflower in Food Processor until smooth, adding more margerine in necessary. Process until smooth and season with lots of black pepper. Add salt to taste.

Some options; Add some freshly minced garlic and some parmesan cheese to the processed caulflower before seasoning.

NOTE: If you usually boil or steam the cauliflower rather than microwave, you will need to mash all of the water out of the cauliflower or it will be to thin.

I had come up with a similar recipe on my own recently and see that someone else thought of it too. In addition to the margarine, salt, and pepper, I added a small amount of low fat milk. (A word to the wise -- don't put too much of the cauliflower in the food processor at one time or it is difficult to get it smooth enough.) My husband actually like the mock mashed potatoes better than the mock potato salad I had been making for years.

For the mock potato salad, cook the cauliflower and cut in bite size pieces -- then add whatever you usually put in your potato salad. Mine is very simple: mayonnaise, salt, pepper, a couple of chopped boiled eggs, and some dill pickle relish (on which I sprinkle Equal or Splenda before adding). Top the whole thing with paprika. I make mine like my mother always made potato salad except she used sweet pickles. There's not a lot of difference in the taste between it and the real thing. I took it to a Sunday school party and it was a big hit.
