Hi Everyone:

I'm sorry this took me so long. Please feel free to nag me in the future if I do this again....


3 cups grated carrots 1 cup spelt flour
3/4 cup applesauce 1/2 cup barley flour
3/4 cup cold pressed sunflower oil 1/2 cup millet flour
1/2 cup brown rice syrup 2 1/2 teaspoons cinnamon
4 large eggs 2 teaspoons baking powder
2 1/2 teaspoons vanilla 1 1/2 teaspoons baking soda
pinch of salt 1 cup chopped nuts & raisins


1. Preheat oven to 325
2. combine oil, applesauce, brown rice syrup and eggs; beat well.
3. Mix dry ingredients together and add to wet ingredients; beat well.
Add vanilla, carrots, nuts and raisins.
4. Pour into a well greased bundt cake pan. (or 3 8 inch cake pans).
5. Bake for 30 to 45 minutes for 8" pans and 45 minutes or longer for
bundt pan. Test with toothpick or skewer for doneness.

I couldn't find millet flour - so I substituted oat flour. and it took quite a bit longer to bake than the recipe said.

Please let me know how it works out with Splenda or equal.
