(OK...I lifted this from another site and modified slightly...)

Servings: 8

Ingredients:
8 lasagna SGWW noodles, uncooked
1 cup shredded reduced-fat Monterey Jack cheese
1 (15 ounce) container part-skim ricotta cheese
1 (4.5 ounce) can chopped green chiles, drained
1/2 teaspoon chili powder
1/8 teaspoon salt
2 cups drained canned black beans (or dried that have been soaked)
Cooking spray
1 (15.5 ounce) jar salsa
Fresh cilantro sprigs (optional)



Directions:
1. Cook lasagna noodles according to package directions; drain well.
2. Combine cheeses and next 3 ingredients, stirring well. Spread cheese mixture over one side of each noodle. Spoon black beans evenly over cheese mixture. Roll up noodles, jellyroll fashion, beginning at narrow ends.
3. Place lasagna rolls, seam sides down, in an 11- x 7- x 11/2-inch baking dish coated with cooking spray. Cover and bake at 350 degrees for 25 minutes or until thoroughly heated.
4. To serve, spoon salsa evenly over rolls, and garnish with cilantro sprigs, if desired.

I've done this with regular spaghetti sauce, roasted veggies and ricotta, making a more traditional lasagne.

this one sounds good also. Maybe I can try this one this weekend, also. I like
cooking I have two new recipes I can try this weekend and not have to go out
to eat. Thanks crystal

Do you have the Cauliflower Potato Salad recipe? It doesn't have potatoes in it...just cauliflower and is a great potato salad substitute! We made it for the first time at my mom & dad's, and my girls even like it! I'll post that one, too.

Do you like crab cakes? The SB cookbook (by the Brennan's) has a wonderful recipe! I made them one night and it made lots. They were SOOO good that hubby said he'd rather have them than go to one of the seafood restaurants he likes by my folks (who live on the coast).

As for recipes, I usually find one I liked before SB, then just substitute with legal stuff and they usually come out pretty good. There was another good recipe I thought I should post, and now I can't remember what it was!! Oh well.

If I find or remember any more I'll try to post them as well.

I had heard of people making potato salad out of cauliflower, but didn't have the
recipe. Sounds good and it tastes just like potato salad? I'll give it a try also and
I like crab cakes also. I can't wait to start cooking. Having fun, talking with you,

Crystal,
I posted the Cauliflower Potato Salad recipe. I'll try to do the crab cakes in the next few days...so much going on with work and upcoming weekend commitments. Might have to run the girls 1/2 way to my folks and let them spend a week or two there before school starts.

If I don't get them posted within the week, just remind me!!

Have fun doing housework! I had a ladies dinner out with church...we have a "sister church" pastor and his wife visiting from Trinidad. Got home and hubby's headache was worse, so he's in bed and I'm having fun here. Should be getting laundry done, but I'm ready to go to bed.
