Feisty Black Bean Soup
1/4 c vegetable oil
1 large or 2 small onions, chopped
4 cloves of garlic, minced
2 small jalapeno peppers, stemmed and minced
1 T ground cumin
1 T chili powder
Salt to taste
2 1/2 cups water or chicken broth (I use 1 1/4 c of each)
*3 (19 oz.) cans black beans
2 T fresh lime juice
Optional garnishes- dollop of sour cream and green onion or cilantro or pico de
gallo, etc.

Heat oil in a Dutch oven. Add the onions and saut? over med. heat, about 5 min. Stir in garlic and jalapeno and cook until the garlic is golden, about 2 min. Add cumin, chili powder, and salt and cook until the spices are fragrant, about 1 min. Pour the water/chicken broth into the pot and simmer for 5 min. Add the beans and simmer over a low heat until the soup thickens and the flavor blends, about 10 min. Remove 2 c of soup and puree in a blender or food processor. Add the lime juice and adjust the seasonings (add more spices, salt, or Tabasco). Garnish as desired. Serves 6

*I think that Progresso is the brand that comes in a 19 oz. can.

This sounds great. I'll probably add some red pepper flakes, I like food feistier than most.

I'll probably wait unitl it cools off, though, it's in the 90's again today.
