Eggplant Spaghetti
1 onion, chopped
1 eggplant, chopped (peel if the skin is tough)
2 T olive oil
1 (28 oz.) cans crushed tomatoes
3 T dried basil or 9 T fresh
8 garlic cloves, minced
? c chopped fresh parsley
1 t fennel seeds
? t red pepper flakes
? t salt

Saut? onion, garlic, eggplant and parsley in olive oil. Add the tomatoes, basil, salt fennel seeds and red pepper flakes. Simmer for 1 hour uncovered. Serve over pasta.
8 serving (freezes well)

*Add 4 Italian sausage links (casings removed); browned and drained and 1 more can of tomatoes
*Add ? c red wine
