4 boneless, skinless chicken breasts
1 egg white
3/4 cup finely chopped pecans
3 Tbsp Whole Wheat Flour
1/4 Tsp Salt
1/4 Tsp Pepper
1 Tbsp Butter
1 Tbsp Olive oil

Flatten chicken to 1/4 inch thickness. In a shallow bowl, lightly beat the egg white.

Combine pecans, flour, salt & pepper in another shallow bowl.

Dip chicken in egg then in pecan mixture.

Brown chicken in butter and oil over medium heat for 4-6 minutes on each side.

Serves 4
