I'm pretty pleased with how this one came out!

6 medium sweet potatoes; cooked and peeled
3 Tbsp. Whole Wheat Flour
1/2 Tsp. salt
dash Pepper
Canola Oil

Shred the cooked potatoes (I like to run them through a Potato Ricer).

Stir in the flour and salt and pepper.

You may have to add a litle more flour depending on how moist the potatoes are. You want the potatoes to be fairly stiff.

Heat 1/2 inch oil in a large skillet.

Form the sweet potatoes into small balls. I used a cookie scoop.

Drop the balls into the hot oil. Fry til just golden brown.
(You could deep fry these instead)
Drain and serve hot.

molly's note:You could place the balls uncooked on a baking sheet and freeze; then store them in a ziplock bag in the freezer; Re-heat on a cookie sheet in a hot oven (400?) til crispy.
