Bag of Mozzarella String Cheese (the kind for kids to snack on)
1/2 cup grape nuts
1 cup 'legal' bread crumbs ( I make my own by drying out 'legal' bread & then grinding it in a blender or food processor
1 Tbsp parsley flakes
1/2 tspn salt
1/2 tspn pepper
1-2 eggs
canola oil

This is a fast, great recipie because you can make as much or as little as you need...I made these the other night (2 sticks divided in 2 filled me up!)

Pour about 1 cup oil in a frying pan & begin heating on low.

Blend grape nuts cereal (I grind mine more in a blender to make it smaller), bread crumbs, salt, pepper, & parsley together (you can add your own spices too)

Beat 1 egg first (use the other if you run out of egg batter)

Open up the string cheese (as much as you think you will need) & cut each stick in half.

Place cheese in egg batter first & then roll it in the bread crumb mixture pressing firmly so bread crumbs stick (sort of like making cutlets) I had to press them extra hard because the mixture doesn't stick to the cheese easily, but it works.

Fry in the oil a few minutes on each side until nice & brown & cheese is melted

Blot pieces on a paper towel to remove excess oil after frying.
