2 Tbsp. olive oil
1-1/2 cups broccoli flowerets
1-1/2 cups cauliflowerets
1-1/2cup diagonally sliced carrots 3/4 cup sliced yellow squash
3/4 cup sugar snap peas
1/2 cup sliced mushrooms
1/2 cup red bell pepper strips
1/2 cup onion wedges
1/4 cup red wine vinegar
1 envelope Italian Salad Dressing
Mix

Heat oil in large skillet on medium-high heat. Add vegetables; cook and stir until tender-crisp.

Stir in vinegar and salad dressing mix; cook and stir until thoroughly heated.

Makes 8 servings
