1/3 cup whole wheat flour
1/2 cup milk
2 eggs
pinch of salt
1 Tablespoon Olive Oil
1 cup sauted veggies (whatever is your favorite: red peppers, onions, zucchini etc)
4 oz Feta Cheese
1/2 cup sliced black olives

Place a 10-inch skillet on middle rack in preheated 450 degree fahrenheit oven for 5 minutes.

Meanwhile, in medium bowl with an electric mixer at medium speed, beat flour, milk, eggs, and salt until well blended.

Carefully remove skillet from oven and add oil, tilting to coat bottom and sides. Pour batter into pan.

Bake for 10 minutes, then reduce heat to 350 degrees and bake 10 minutes more, until puffed and brown.

Remove from the oven; Sprinkle with the saut?ed veggies, Feta cheese, and black olives.

Return to the oven for 3-5 minutes to melt cheese.
