Recipe courtesy Michael Meadows
Chicken w/ Tomato Wine Sauce

ingredients: 4 boneless/skinless chicken breasts
1 large onion-diced
4 tablespoons olive oil
3 cans dices tomatoes
1/4 cup diced sundried tomatoes
1/2 cup of good (not cheap!) red wine
1 diced green pepper
1/4 cup of chopped fresh basil or 5 tablespoons of dried basil
3 cloves crushed garlic
salt and pepper to taste
4 cups of cooked brown rice
process: brown the chicken breasts and onions in the olive oil (make sure the onions are fully carmelized). Add the wine (be sure to deglaze the pan with the wine). Add the sundried tomatoes, canned tomatoes, green pepper, basil, salt and pepper, and garlic.Cover and simmer for about 45 minutes. Serve over brown rice.
