This is a "de-carbed" version of those sinful Twice Baked Potatoes that I love so much.

2 16 oz bags frozen Cauliflower
4 oz. Cream Cheese
1/4 C. sliced Green Onions
1/2 C. Sour Cream
2 C. Cheddar Cheese
4 slices Bacon - fried crisp
Parmesan Cheese

Cook cauliflower per directions on package (should be quite soft) and drain.

Place the cauliflower in a large bowl. Add the next four ingredients and beat with electric mixer until cauliflower is in very small pieces.

Crumble cooked bacon and mix into ingredients.

Pour into a greased casserole dish. (If I am having company sometimes I put the cauliflower mixture into individual ramekins to bake. Looks really cute for everyone to have their own little casserole)

Sprinkle parmesan cheese on top and bake in 350? oven for 20-25 minutes.


molly's note: For Faux Mashed Taters just leave out the bacon, cheese & onion.
