Recipe courtesy Susan Revels
Cream Cheese/Kingcake

ingredients: 2 pks Yeast
pinch of fructose
1/4 cup water-140 degrees
3/4 cup water
1/2 cup canola oil
2 eggs
12 packs Equal
4 cups whole wheat flour

1 egg
2 packs Cream cheese (8ox)
14 pks Equal
process: Dissolve yeast in 1/4 c. water sprinkle with Fructose, allow to sit about 5 minutes.
Add remaining water,oil,eggs, Equal. Mix well. Add flour gradually. (Dough will be sticky) Allow to rise in a warm place for about one hour. Dough will rise about 30-40%. In a separate bowl mix cream cheese,egg and Equal (this works best if the cream cheese is at room temp.
Place dough on a floured board (lots of flour !)roll into a rectangle. Spoon the cream cheese across the center of the rectangle (horizontally) Now roll the dough keeping the cheese mixture secured in the center. With the seam down, make a circle (Kingcake shaped) Transfer the cake to an oiled cookie sheet. Allow it to rise again for about 45 minutes. Bake at 350 for 30 minutes.
Icing sugesstions are:
Sweet and low White icing (dyed purple, green and gold)Don't follow the package instructions, just add a litttle bit of water until you have it the consistancy of icing. Sans Sucre Vanilla Mouss mix( but don't follow the package instructions, just add a bit of water to make it the consistancy of icing).
