Normally I would think Sourdough being a white bread would be on the do not eat list but my sister insist that the ingredients in Sourdough bread are very good for losing weight? I cannot find a specific reference to Sourdough on the site so does anyone know about this or can provided some insight? Thanks, Speedy

Hi Speedy,

I've never seen a legal sour dough bread. I really love the hard crust San Francisco style of this. but it is totally made with white flour.

Imo I think that it could be made with sgww flour! I will have to try it and see.

If Someone can come up with a LEGAL recipe, PLEASE let me know. I LOVE SOURDOUGH. I don't know how you could though, with the yeast feeding off the sugar...

I do remember reading something about sourdough being lower GI than many breads. I think it had something to do with one of the ingredients slowing the effect of the sugar on the body. I'm pretty sure where I read it was NOT in the SB book, though, but some other low-carb book. Of course, now that I look for that info, I can't find it...

In "Sugar Bust for Life With the Brennans" (Sugar Busters cookbooks written by owners of Brennan's restaurants in New Orleans), there are some recipes for whole wheat breads of various kinds, made without sugar, although they do have a bit of granulated Sweet 'n Low (which has a small amount of dextrose in it ... which is sugar) ... I categorize these as "salt rising breads" ... they rise because of salt, not sugar ... in these books there is a buttermilk whole wheat bread and I'd think that'd be similar to sourdough, although I haven't made it. It seems like it'd be possible to make sourdough with whole wheat flour ... anyhow, SB does not say that you can't have bread made with small amounts of sugar ... just that it should be whole grain ... there may be an acceptible sugar limit per serving, dunno ... anyhow, I'd recommend you look at the Brennan's recipes to see if you could do something with sourdough ...

Thanks everyone for their replies. My sister gave me a page from another diet/health book which says the whoel grain breads etc are the best, same as SB but adds that Sourdough breads are also acceptable due to the emzyme in them that reduces the amount of sugar digested. So it appears not a good as whole grain but better then most whites. On another note I have found a good Flax Seed bread at the Costco in San Diego. It seems to fit all the essentials of SB and is tasty.
