2 tsp. butter or Olive Oil
2/3 cup chopped onion
2 cups uncooked brown rice
4 cups chicken broth
2 Tbsp. fresh lemon juice
1 tsp. lemon zest
1/4 tsp. white pepper
1/2 tsp. salt
1 Bay leaf

Preheat oven to 350 degrees

In a large pot or oven proof Dutch Oven, over medium high heat, melt the butter{or add the oil}.

Add the onion & saute until the onion is translucent, stirring occasionally for about 5 mins.

Add the dry rice; cook & stir for one minute or until the grains of rice are coated with the onion/butter{or oil} mixture.

Add the chicken stock, lemon juice, seasonings & Bay leaf.

Bring to a boil; reduce heat to simmer; cover & cook for 15 minutes.

TURN OVEN to OFF; place covered pan into the oven for 10-15 minutes;(you can skip this step but it seems to "fluff" the rice. Try it... I think you will like it a lot)
