From: South Texas - less than an hour from South Padre Island and Mexico.

Whole Wheat Pizza Crust
1 1/2 c Warm water
2 tb Veg. oil
2 tsp. honey
1 egg
1 1/2 tsp Salt
2 1/2 c Whole wheat flour (stoneground whole wheat white or pastry grain)
4 tb Gluten flour
1 1/2 tsp Yeast

Disolve reg. yeast in warm water and add oil, honey, egg, and salt, and 1
cup whole wheat flour, and mix well. Cover and set in warm place
until light and bubbly.
OR....
Using SAF type yeast, mix with one cup flour, then add the liquids and mix well. Rest 5 minutes, then...

Add remaining wheat flour only until it holds together well. Knead for 10 minutes or more.
Grease top of dough, put in oiled bowl, cover, let rise 35-45 minutes. After 1st
rise, punch down, knead briefly, allow it to rest about 10 minutes --
pat it down occasionally. Heat pizza stone in 400F oven. On a
rough ground grain covered board, roll, pound, and push
dough into a circle. Take out stone, slide dough onto it, top with
sauce and pizza ingredients. Cook pizza 10 to 15 mins.

I have a crust recipe that we just LOVE!!! It takes a little while because of the rising but it is an awesome crust, thick or thin!!

1 TEASPOON YEAST
1 CUP WARM WATER
1 TEASPOON SALT
1 TEASPOON OLIVE OIL

MIX LET STAND 5 MINUTES THEN ADD

STONE GROUND WHOLE WHEAT FLOUR

ADD 1/4 CUP AT A TIME, DON'T ADD TOO MUCH, YOU WANT THE DOUGH TO BE NICE AND SOFT.

PUT A LITTLE OLIVE OIL IN A METAL BOWL AND PUT DOUGH INTO BOWL PLACE IN OVEN AT 175 DEGREES FOR ABOUT 15 MINUTES, TURN OVEN OFF, LEAVE DOUGH IN TO RISE FOR 1 HOUR. POUR A LITTLE OLIVE OIL IN THE PAN YOU WILL USE TO MAKE YOUR PIZZA, TAKE DOUGH AND PRESS INTO PAN WITH YOUR FINGERS. "FORK IT" THEN BAKE AT 450 DEGREES FOR ABOUT 10-13 MINUTES, CHECK THE BOTTOM OF THE CRUST FOR DONENESS.

NOW YOU ARE READY TO ADD YOUR TOPPINGS OF CHOICE.

This pizza crust is absolutely delish!!! I was totally shocked the first time we made it!! It's not difficult to make either. We double the ingredients the first time and made two pizzas with really thin crusts, but the pans we used were the very large pizza pans I think 14 or 18 inch pans.
