1 medium cucumber, diced
1 (16 oz.) can diced tomatoes (I have used fresh tomatoes when in season with good results.)
1 green bell pepper,diced
1 red bell pepper,diced
2 Tablespoons red wine vinegar or apple cider vinegar
1/2 tsp.crushed red pepper flakes
1/2 tsp. minced garlic
1/2 tsp. ground cumin
1 tablespoon fresh cilantro, chopped fine
1/4 tsp salt
1/8 tsp. ground black pepper
1 Tablespoon olive oil

Mix all together in a bowl and allow to sit for about an hour, taste for seasoning.

This improves the longer it sits, I usually try to make it the day before I plan to serve it.
