There aren't any real measurments for this. Just add what you have on hand.

Cucumber Salad

Sliced cucumbers (peeled or unpeeled)
Sliced sweet onions
Chopped fresh tomatoes
Chopped sweet peppers (any color)
Your favorite Italian Salad dressing

Mix all together. Refrigerate until serving.

I have made one that is close to this too!
But mine was just tomatoes, red onions, and cucumbers.
Topped with salt and pepper and some balsamic vinegar.
So simple, yet sooooooo good!

Here's another vote for your salad, Molly!

My favorite salad from my favorite restaurant (where they make the kubeh) is just like yours but w/out the tomatoes (which I don't eat, so it's just right for me) - they do add lots of dill which makes it ever so yummy. Eating it right now w/roqefort cheese (IMG:http://www.sugarbustersforum.com/forum/style_emoticons/default/biggrin.gif) . They probably mix some sugar in w/the vinegar and oil, but I so rarely eat prepared foods, that I don't let it bother me.
