This isn't as good as a traditional cook all day long jambalaya but it does have all the same zesty flavors of a classic jambalaya -- sausage, okra, herbs, and rice. Plus it is a quick, easy-to-fix one-skillet meal.

1 (19 ounce) package Italian Sausage, cut into 2-inch pieces
1/2 cup diced onion
1/2 cup diced celery
1 (14.5 ounce) can diced tomatoes
1 (10 ounce) package frozen cut okra, thawed
1 cup chicken broth
1/2 cup uncooked brown rice
1/2 teaspoon hot sauce
1 teaspoon oregano
1/2 teaspoon thyme

In a nonstick skillet over medium heat, cook sausage, onion and celery until sausage is browned.

Add tomatoes, okra, chicken broth, rice, hot sauce, oregano and thyme. Stir to combine.

Bring to a boil. Cover, reduce heat to low and simmer for 35 to 40 minutes or until sausage is cooked through and rice is tender.
