Does anyone have the first sugar buster book, with the Chocolate mouse recipe. I made it once and it was delicious, but lost the recipe. Thanks,

kathi eh, here's the recipe from the book:

SUGAR BUSTERS! Chocolate Mousse

1 1/2 lbs. chocolate (must be at least 60 percent cocoa)
1 1/2 qts. heavy cream
5 egg yolks
6 oz. decaffeinated coffee
5 egg whites

Melt chocolate in microwave or over boiling wter. Boil 2 cups cream. Add egg yolks and decaffeinated coffee, then pour boiled cream over chocolate. Whisk until no lumps remain. Whip egge whites and fold into mousse. Whip 1 qt. cream to soft peaks, then fold into mousse. Chill until ready to serve.

Enjoy!

Just a quick addition to the recipe. When you make a custard (that's sort of what this is, the cream and egg mixture), you need to be careful not to scramble the eggs when you add them to the hot cream. To prevent this, you should temper the egg mixture. This is done by adding a small amount of the hot cream to the egg and coffee mixture (I'd mix these before adding to the cream). This raises the temperature of the egg mixture and dilutes it with some cream. Then, add the egg mixture back to the rest of the hot cream. No scrambled eggs in the mixture then.

:DThank you for the Chocolate Mousse recipe, I will make it for a special occasion -- my son loved it when I made it a year ago & said it was the best dessert he ever had & he is not following sugar busters diet. Thanks for extra advice on mixing cream & egg that is great info to know.

must be at least 60 percent cocoa

Can you tell me if the cocoa percentage is on the packages?
What about the drinking cocoa..does that count?
