10 cups sliced apples -- Gala, quartered
1 tablespoon orange zest
1/2 cup E.D.Smith Sugar Free Pancake Syrup--OR YOUR CHOICE
1/4 cup Splenda
pinch salt
1 1/2 teaspoons apple pie spice
2/3 cup water
1/8 teaspoon butter flavoring -- optional

guar gum for thickening* see below OR mix 1 1/2 tsp. arrowroot with water & stir in. Simmer for about 1 minute longer.

-Peel, core and slice the apples{I like Gala but the Granny Smith work well too}
-Put apples into a deep skillet or Dutch oven.
-Sprinkle on cinnamon, splenda & salt.Add the orange zest.Stir to coat apple slices with the cinnamon mixture.
-Pour on the syrup , water & lemon juice.Cover.
-Bring to a gentle boil over medium high heat.Reduce to simmer & cook for about 12 minutes or until the apples are just fork-tender.
-Move aside some of the apples & whisk in about 1 tsp. guar gum into the simmering liquid. Cook & stir until slightly thickened.*Arrowroot flour could be used instead of the Guar Gum.
-Remove from heat , keep the lid on & let cool.
-When cool, divide into 8 containers cover with lids or plastic wrap.
-Store in the fridge or may be frozen.
-Serve warmed with whipped cream if desired.
-8 servings{no topping}: 1 P per serving

* GUAR GUM can be purchased at any Health Food store. It is a thickener used in syrups. I like it because it can be whisked in to hot or cold liquids and the result is a nice glossy syrup. Leaves NO taste!
Arrowroot flour could be used instead or use no thickener at all.
