Mint Chocolate Chip Ice Cream

2 cups heavy cream
1 cup very cold water
sweetener to equal 1 cup of sugar
1/8 tsp. salt
1 1/2 tsp. peppermint extract
1 tsp. vanilla extract
1/3 cup chopped chocolate (either sugarfree or 60% or higher like Lindt)

Mix first six ingredients in mixer until sweetener is dissolved. Pour into ice cream machine following manufacturer's directions. When ice cream is the desired thickness, stir in chopped chocolate.

I add a few drops of green food coloring to give it a mint color or if I'm making lemon, I'll add a few drops of yellow.


Note: I'm also a lemon and chocolate freak, so several times I've made this substituting lemon extract for the peppermint extract. Both kinds are yummy...imho! (IMG:http://www.sugarbustersforum.com/forum/style_emoticons/default/biggrin.gif)

I'm sorry I don't know who to give the credit for this recipe to...I believe I got it from the Somersize recipe boards.
