From: South Texas - less than an hour from South Padre Island and Mexico.

Tear leaf lettuce and spinach in pieces.
Add chunks of cooked chicken
Add 1 drained can of mandarin orange slices
Add 1/2 cup or so of your favorite nuts (walnuts, sliced almonds, cashews, pecans)
Add 1 cup sliced mushrooms
Add 1/2 thin slices/pieces red onion

and... your favorite dressing. Mine is Caesar.

That sounds so good. I have been looking for a new salad to try, thanks! By the way, if anyone is looking for mandarin oranges that aren't packed in syrup, Kroger has their own brand of light mandarin oranges packed in orange juice.
