Beef Cassoulet

1 1/4 pounds boneless top sirloin beef steak
1 tablespoon olive oil
? teaspoon salt
? teaspoon pepper
1 ? teaspoons olive oil
2 Stalks Celery -- cut into 1/4" Slices
1 tablespoon Garlic Minced
2 small onions -- each cut lengthwise into 8 wedges
8 ounces cremini or button mushrooms -- quartered
? cup dry red wine
1 can small white beans -- (16-ounce) rinsed, drained
1 can diced tomatoes -- (14 ?-ounce)
1 cup V-8? vegetable juice

In large nonstick skillet, heat 1 tablespoon oil over medium-high heat until hot. Stir-fry beef in 2 batches, 1 to 2 minutes each, or until outside is no longer pink. Remove from skillet. Season with salt and pepper.

In same skillet, heat 1 ? teaspoons oil over medium heat until hot. Add celery and onions. Stir-fry 5 minutes or until crisp-tender.

Off the heat, stir in mushrooms, V-8 Juice and wine. Continue stir-frying 5 minutes. Stir in beans, garlic and tomatoes. Continue cooking 3 minutes.

Return beef to skillet. Cook 2 minutes or until just heated through.

NOTES : This shortcut recipe for cassoulet is ready to enjoy in about 30 minutes, an inviting option for those who love the French classic but not the traditional long preparation.

An easy solution for a weeknight dinner, the cassoulet combines boneless beef sirloin steak with canned beans and seasoned diced tomatoes for convenience. Mushrooms and onions simmered briefly with the beans add flavor accents.
Crusty Wholewheat bread and a simple green salad complete the meal.
