From: South Texas - less than an hour from South Padre Island and Mexico.

This is my new favorite soup! I went out to lunch with my girlfriend and they served it. I came home and made it for supper...mmm... and it's quick, too.
I used the ground sausage..... so good! ~Linda

Italian Wedding Soup

1 pound ground sausage or ground beef
1 cooked chicken breast, chunked (or boil 1 or 2 first for your broth)
2 eggs, lightly beaten
3 slices of bread to make crumbs
3 tablespoon grated Parmesan cheese
1 teaspoon dried basil
2 T chopped onion or you could use onion powder
10 - 12 cups chicken broth ( I used 2 boxes of free-range chicken broth)
(you could use fresh broth or chicken bouillon, I suppose)
2 cups chopped spinach
1/3 cup finely chopped carrot
salt & pepper

It calls for orzo or small noodles, but I used 3 whole wheat tortillas sliced thinly (1/4 in or so)

Directions
1 In medium bowl, combine meat, egg, bread crumbs,
cheese, basil and onion, salt and pepper ; shape into 3/4 inch balls.
2 In large saucepan, heat broth to boiling; stir in chicken,
spinach, chopped carrot and meatballs, salt and pepper. Return to
boil, then reduce heat to medium. Cook at slow boil for 10
minutes. Stir frequently.
3. Add thinly sliced whole wheat tortilla 'noodles' and cook 1 minute.

Serve immediately with a little parmesan sprinkled on top.
