Ok...I just made this and it is CHOCOLATELY and yummy!!!
Joanie's Dirt Pie
1 large box of Jello-O Sugar Free, Fat Free Chocolate Instant Pudding/Pie Filling
1 small container regular Cool Whip (only 1 gm sugar per serving)
2 1/2 cups milk (to make the pie filling mix)
1 box Snack Wells Sugar Free Chocolate sandwich cookies (divided)
1/2 stick of margarine or butter, melted
In a microwave safe pie dish (or bowl) melt your margarine. Take all but 5 of the cookies (I guess you could snack on the remaining 5 while cooking this!!). Of the remaining cookies, set aside to decorate top of pie. Chop the cookies and mix with melted margarine and form a crust in the bottom of your pie plate. Go ahead and chop the remaining two and set aside. (Or crush them all and just reserve enough to sprinkle on top!)
Make the pudding filling recipe with the chocolate pudding and the milk (2 1/2 cups). Whisk for 3 minutes. Fold in about 1/4 of the Cool Whip and whisk/fold until well blended.
Pour filling over chocolate crust then sprinkle with the remaining chopped cookies.
Refrigerate for at least 2 hours.
NOTE:
OK - The Snack Wells don't have sugar, but they are made with enriched flour which may be considered a no-no by many, and the Cool Whip has Corn Syrup and High Fructose Corn Syrup. BUT...all things considered I don't think is all that bad for a treat!! The other varieties of Cool Whip tend to have more carbs/sugars.
