Ingredients
2 or 3 medium sized sweet potatoes
1 cauliflower
1 large onion
2 carrots
tin of cut green beans
2 tins of chopped tomatoes
curry powder
oil for frying
Chop the onion and peel and cube the potatoes. Fry them on a low heat together until fairly soft. Add the tins of tomatoes and 1 or 2 tablespoons of curry powder. Do this gradually until you find the taste as you like it. In a seperate pan boil the cauliflower (cut into pieces) and peel and slice the carrots and boil them to. When they are cooked add them to the curry mixture. At this point I add boiled water so the mixture is quite runny. I then simmer it for about 35 - 40 minutes until it reduces. Make your rice and serve.
Another longer way to make this but easier is to just put all the ingredients together in a slow cooker with the water and leave it cooking all day. If you do this it brings out the flavour more.
You can also add meat if you like. Any meat that you like will be good, just make sure you cook it well.
