I love (and greatly miss) the convenience of the Jello Instant Cheese Cake mixes, so the other night I tried experimenting with cream cheese and instant sf pudding. It turned out really good, so I decided to share it with everyone (my New York Style conversion wasn't so successful).

2 pkg cream cheese, softened (I used 1/3 reduced fat)
1 lg box sf instant vanilla pudding
1/4 - 1/3 cup agave (to taste)
1/2 tea. lemon extract
3/4 cup milk

1 cup finely chopped nuts
1 tbs butter, melted
1 tea. agave

fruit topping if desired

1. Mix chopped nuts, butter, and 1 tea agave together and press in the bottom
of a pie plate

2. Beat first 5 ingredients together until well blended, pour over nut mixture
Chill atleast an hour to help it set-up

3. Top with sf fruit topping of your choice and serve.

Last time I made the cheese cake, I put it in dessert cups without a nut crust, so I didn't need to chill it before serving. My husband and I both had a problem with portion control with this dessert!!
