Peanut Butter Pudding
3/4 cups fat-free milk
2 tablespoons natural creamy peanut butter
1 pkg sugar-free instant instant vanilla pudding
In a bowl whisk milk and peanut butter until blended. Add pudding mix; whisk
for 2 minutes or until slightly thickened. Spoon into dessert dishes.
Refrigerate for at least 5 minutes before serving. Just before serving add a
dolllop of Redi-Whip

A question about the instant pudding:
Which brand do you use? I found the most common one at Safeway and it had Maltodextrin as second or third ingredient.

Just regular old JELLO... The sugar free/fat free kind.

I just bought the Jello Pudding mix Fat Free/Sugar Free but noticed that it does have the maltodextrin in it as the second or third ingredient, is it still legal or should it be avoided or should I have it just in moderation? Thanks for any info!

I was very disappointed in all the products that have maltodextrin. Maltodextrin has a GI of 100-150 (not good).
