Full Version: Peanut Butter Cookies - Excellent

1/2 C butter, softened
1/2 C peanut butter (natural, creamy or crunchy)
1/2 C brown sugar (I used fructose)
1 egg
1/2 t. vanilla
1 C whole wheat flour (I used 1/2 w.w. flour and 1/2 whole oat flour)
1 t. baking soda
1/2 C dry milk powder
1/2 C chopped peanuts
1 oz 70% cocoa chocolate, chopped fine (optional)

Cream butter, peanut butter and sugar (fructose) in mixer bowl, add egg and vanilla and mix until creamy. Combine flour, soda, milk powder and peanuts. Add to butter mixture. Drop by teaspoonfuls onto non-stick cookie sheet; flatten with a fork. Bake at 350 for 8-10 minutes. Let cool on pan for a minute before removing to wire rack to cool completely.

Makes 36 cookies

Not incredibly sweet, but good texture and flavor.
