Whole Wheat Psta w/ Pnut Sauce

ingredients: 1 cup creamy/crunchy all natural peanut butter
3 Tbsp. lite soy sauce
3 Tbsp. lemon juice
2 garlic cloves, finely chopped
1 tsp. dried red pepper flakes
16 oz. Hodgson Mill Whole Wheat Pasta (spaghetti, fettuccine or any other shape)
2 cucumbers, peeled, seeded and cut diagonally into 1/8 inch slices
1 cup green onion, thinly sliced
1 cup thinly sliced red bell peppers
salt and pepper to taste
process: In blender combine peanut butter, soy sauce, lemon juice, garlic, red pepper flakes amd 1 cup of hot water; puree until smooth.
Prepare pasta according to package directions until al dente; drain and rinse briefly under cold water. Drain well.
In large bowl, toss pasta with peanut sauce, cucumbers, green onions and red bell pepper.
Add salt and pepper to taste.
Serve immediatly (warm or chill)
