Grilled Eggplant Parmesan
Slice the eggplant into 1/4" slices either crosswise or lengthwise. Spray each
slice with nonstick olive oil spray or brush with olive oil. Grill until
tender. Layer eggplant, your favorite spaghetti/marinara sauce and shredded cheese (mozzarella and Parmesan or Italian blend) in a casserole dish. Bake until cheese is melted and bubbly.
*I only peel eggplant in the Winter when it's out of season and a little
tough. This makes a great meatless meal or a good side dish with lean Italian
sausage.
