OK...another one I lifted!! wink.gif If you do a search on google, there's tons of them...basically as you would make your own favorite potato salad...just substitute with cauliflower for the potatoes.

1 head cauliflower, cut into florets
1/2 cup slices scallions, including the green
3 celery ribs, chopped fine, including some inner leaves
1/2 green bell pepper, chopped fine
1/4 cup chopped parsley
Salt and Pepper to taste
3 hard-cooked eggs, chopped
1/2 to 1 tsp. celery seed
Paprika to garnish

Dressing
2 tsp. dry mustard
2 TBS cider vinegar
1 cup mayonnaise, Best Foods or Hellmann's (I use Duke's brand which is SF)
(I've added a dash or two of tabasco)


Steam the cauliflower florets until crispy tender but not soft. Set aside to cool. Put the scallions, celery, bell pepper, and parsley in a large salad bowl. Add salt and pepper. Make the dressing, mixing the mustard, vinegar and mayonnaise in a small bowl until smooth. When cauliflower is cool, chop and add it to the vegetables and celery seeds and mix well. Sprinkle paprika on top and cover with plastic wrap. Let sit in the refrigerator for at least 2 hr. for flavors to develop.

That sounds like a good one - I made a jicama one last week & we were thrilled with the results. Will try yours also. thanks biggrin.gif

I didn't put this in the receipe, but I like to add about 2 or 3 drops of Texas Pete or Tabasco sauce just to give it a little flavor...it's NOT hot but does add to the overall flavor!

I LOVE this stuff!! It reminds me of Shrimp Salad, so to make it more of an entree, you could easily add chopped boiled shrimp!! rolleyes.gif
