Full Version: Chive Mushroom Soup

1 cup finely chopped fresh mushrooms
1/4 cup butter
2 Tbsp Whole Wheat Pastry Flour
1/4 Tsp Salt
1/8 Tsp dry Mustard
1 cup Chicken Broth
1 cup Half and Half
2 Tbsp snipped Chives

Saute mushrooms in butter until tender. Stir in flour, salt and mushrooms. Gradually stir in broth.

Bring to a boil; cook amd stir for two minutes.

Reduce heat and stir in half and half and chives.

Continue to cook until heated through.

Serves 2

Just let me know if there is a particular food or recipe you have a hankerin' for. If I don't already have it in my repritoire I'll be happy to experiment-- maybe I can come up with a new creation.

The mushroom soup is delicious! wub.gif We made some today. I actually didn't have any chives on hand... put some garlic in instead. Also used a mix of white and shiitake mushrooms. The soup went will with the left-over grilled pork loin (from last night) and a scoop of brown rice. YUMMY! tongue.gif

I'm so glad you liked it. I prefer it with a mix of types of mushrooms too-- gives it a more complex flavor.
