Creamed Spinach a la Claire

ingredients: 2 Pkgs. Frozen Spinach (cooked in water & drained)
1/2 C. Heavy Cream or half & Half
1/2 lb. Monteray Jack Cheese, preferrably "Salsa" Jack or "Pepper" Jack
Salt and White Pepper to taste
Grated Medium Cheddar Cheese
process: Mix drained spinach with cream over low heat.
Add cubed Jack Cheese.
Season with salt and white pepper.
Pour into baking dish and top with grated Cheddar cheese.
Bake at 350 until cheese is bubbly.
