2 cups Old-Fashioned Oats
1 cup whole wheat pastry flour
1/2 cup sunflower seeds
1/4 cup flax seeds; ground
1 teaspoon caraway seeds
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/4 cup unsalted butter, melted
1 cup milk

Preheat oven to 350 degrees.

Grease muffin cups.

In a medium bowl, mix together oats, flour, sunflower, flax, and caraway seeds, baking powder, and salt.

In a small bowl, whisk together egg, butter, and milk. Pour the liquid ingredients into the oat mixture and stir until blended.

Spoon into prepared muffin cups, filling each three-fourths full.

Bake in preheated oven until tops are golden, about 20-25 minutes.

Place muffins on a wire rack to cool.
