Cream together:
1/2 cup butter
1 cup Splenda
1 1/2 teaspoon Vanilla
1 tsp. baking soda
1 teaspoon cinnamon
Add:
2 eggs
1/2 cup SF applesauce
dash of salt
Add:
1 1/2 cups stone-ground whole-wheat flour (mix well)
Stir in:
3 cups Old Fashioned Oats
1 cup chopped pecans
Heat oven to 325 degrees.
Mix cookies as directed above.
Drop by rounded tablespoonfuls onto ungreased cookie sheet.
Bake 8 to 10 minutes or until barely golden brown. Do not overbake.
Let cool on cookie sheet about 1 minute, then remove cookies to a wire rack to finish cooling.
Makes about 5 dozen small cookies

I LOVE LOVE LOVE these cookies like there's no tomorrow. I usually omit the nuts because my stomach can't handle nuts well. But these are FABULOUS!!!!...and make an amazing after school snack for kids. If I want to give them a treat I will make "legal" icing and let them dip their oatmeal cookies in it.

Thanks Crystal ... I love to bake these for my grandkids. It feels good knowing I am giving them something healthy.
