1 egg, beaten with a little water
Whole Wheat Bread Crumbs
1 tsp Italian Seasoning
8 slices mozzarella cheese, or more
1 can No Sugar Added Spaghetti Sauce (Hunts makes a good one)
Parmesan cheese
Stir together the Bread Crumbs and the Italian Seasoning.
Dip the chicken breasts in water/egg mixture and then in bread crumbs.
Brown on both sides until golden. Set aside in baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast.
Top with the spaghetti sauce.
Sprinkle with Parmesan cheese, and a little more mozzarella
(there can never be too much mozzarella!
Bake for 30 minutes at 350º.
Serve with whole wheat garlic bread and a crisp green salad- YUMMERS!
