This is a recipe that I converted to be SB friendlynfrom an old one I used to make when my kids were small. I tucked a brownie in their lunch boxes hence the name.

6 TB cocoa powder
1/3 cup fructose
1/3 cup Splenda
1/4 cup plus 3 TB Oat flour
1/4 cup whole wheat pastry flour
1/4 tsp baking soda
1/8 tsp salt
4 TB butter
1/4 cup cold milk
1 egg
1 tsp vanilla extract

Preheat oven to 350?F.

Spray an 8-inch square baking pan with canola oil spray and set aside.

In a medium mixing bowl, whisk together the cocoa powder, sweeteners, oat flour, whole wheat pastry flour, baking soda, and salt. Set aside.

In a small saucepan, melt the butter. Remove from heat. Add the cold milk. Gently whisk in the egg and the vanilla.

Add this mixture to the dry ingredients and whisk to blend to a completely smooth batter.

Spoon the batter evenly into the prepared pan.

Bake for 30 minutes. Cool in the pan. Cut into 16 squares.


smile.gif molly's note: I find the combo of sweeteners produces a truer "sweet" taste than either one of them alone.

Also if you like nuts in your brownies you could always add a handful of walnuts to the batter.
