1 Egg
4 tb butter
1/4 cup Agave
1 1/2 tsp Vanilla
1 cup Grated zucchini
1 cup Whole wheat pastry flour, minus 3 tablespoons
2 tbsp Wheat germ
3 tbsp Oat flour
1 tsp Baking powder
1 1/2 tsp Cinnamon
1/4 tsp Ginger
1/4 tsp Nutmeg
1/2 cup Chopped Pecans

Preheat oven to 350?F.

In the blender process the egg, butter, agave, and vanilla until smooth and creamy.

Pour into a bowl,add the zucchini and mix to combine.

In another bowl, combine the flours, wheat germ, baking powder, cinnamon, ginger, and nutmeg.

Add the wet ingredients to the dry
Stir well to combine the ingredients. Stir in the nuts.

Spread the batter in a PAM-sprayed 8 x 8 baking dish.

Bake for 30 minutes.

Cut into squares.
