1 cup butter, softened
1 3/4 cups Sweetener (I use part Splenda & part Fructose)
4 eggs
2 1/2 cups cooked, mashed sweet potatoes
1 cup Oat flour
2 cups Whole Wheat Pastry Flour
2 teaspoons. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1 tsp. vanilla
1/2 cup flaked unsweetened coconut 1-2 cup walnuts or pecans, chopped
Cream butter, gradually adding Sweetener.

Add the eggs one at a time beating after each one. Add sweet potatoes and stir to combine.

Combine flour, baking powder, soda, cinnamon, nutmeg and salt.

Gradually add to sweet potato mixture beating after each addition. Batter will be stiff.

Stir in vanilla, coconut and nuts.
Pour batter into a well greased tube pan and bake at 350 for 1 hour or until it tests done with toothpick.

Cool in pan for 15 minutes, remove from pan and let cool completely on a wire rack.

molly's note: This can also be baked in two loaf pans but I would check after 35 minutes and continue to bake until the loaves test done.
