1/4 cup chopped dried apricots
3 Tbsp orange juice
1 cup ricotta cheese
3 Tbsp Agave
1/2 tsp coriander
Soak apricots in juice until soft.
Combine apricot mixture, ricotta cheese, agave and coriander in blender. Mix till well blended.
Cover and refrigerate up to 3 days.
Spread on toasted WW bagels or WW English Muffins
Makes 4-6 servings
