Full Version: Cream Of "something" Soup

This is a throw together soup- very quick to make with whatever you have in the freezer.

1 pkg froz veggies of choice (cauliflower, broccoli, spinach, squash- basically any Low GI veggie).
1 can chicken broth

Simmer veggies in broth (you can add, onions, celery, garlic or a tiny bit of carrot for color if desired.)

When everything is soft,season to taste with salt & pepper.

Using a hand blender, puree until soup is of a desired consistency. (I like it a little chunky)

Stir in 1/2 cup cream or half and half and some shredded cheese. Heat through but do not let the soup come to a boil.
Mmm... Any way to make it more like the condensed soup to use in recipes?

Joanie: It wouldn't have the same consistency as a canned "cream of"- not thick enough.
Canned "cream of" is acceptable on SB though. It's used in the recipes in the SB Quick and Easy Cookbook.
