This is an "old" recipe that I converted to be SB legal. You can sub other low GI veggies if you like. It's pretty accomodating. As I understand it this was named golfer's stew because it could be bubbling away while you are on the golf course
enjoying yourself... or not depending on how good a golfer you are. smile.gif

3 pounds beef chuck roast -- diced and browned in a bit of olive oil
10 ounces condensed cream of celery soup -- (1 can)
2 cloves garlic -- crushed
3/4 cup onion -- slices
3/4 cup celery -- diced
1 1/2 cups mushrooms -- sliced
1 pkg frozen Green Beans

Mix all in a crockpot.

Cook on High for 1 hour; reduce heat to low and finish cooking overnight or about 6 hours.
