Olive oil
1/2 lb. yellow squash, cut into chunks
1/2 small onion, cut into chunks
1 Tsp minced garlic
2 T sour cream
Juice of 1/4 lemon, or to taste
Salt & Pepper to taste
Parsley to taste
1-2 T parmesan cheese
Heat olive oil over medium-low heat in non-stick pan.
Add squash, garlic and onion and sweat them until just crisp-tender.
Turn the heat to the lowest setting and add the sour cream, lemon juice, salt, pepper, parsley and cheese and mix gently. Serve hot. Yum!
