I'm not familiar with Mom's spaghetti, but here is my recipe. It takes some time, but not much attention, particularly if you oven cook the sauce.
Spaghetti Sauce
3 Tbs olive oil
1 medium onion, chopped
4 cloves garlic, chopped finely
3 cans (28 oz) crushed tomatoes in puree
2 cans (28 oz) tomato sauce
1 Tbs Oregano
1 Tbs Basil
2 tsp Italian seasoning
1 tsp Marjoram
˝ tsp Rosemary
˝ tsp Thyme
˝ tsp Tobasco
2 dash Worcestershire Sauce
1 tsp black pepper
Salt, to taste – canned tomatoes have a lot of salt, taste after cooking many hours, adjust if needed
1 pinch cayenne
1 lb lean hamburger
1 packages (12 oz) Jimmy Dean Hot Sausage
2 can (4 oz drained) mushrooms – to taste -fresh are better - saute in olive oil and butter then add
Sauté onion and garlic in olive oil. Add tomatoes, sauce, and spices. Simmer for 6 hours, using wire between burner and pot to help prevent burning. Stir occasionally. Brown hamburger and sausage, drain. Add to sauce. Add mushrooms. Simmer for 2 more hours. Skim fat. Better if frozen before serving.
Note: can be cooked for shorter time.
It is easier to cook large pots in the oven – it cannot burn and it gets even heat.
Start at 350, reduce to 300 after it comes to a boil.
