2 oz of a Lindt 70% chocolate bar
24 dried apricots
1 Tbsp chopped pistachios

Microwave the chocolate on high for 1-2 minutes, stirring halfway through until completely melted. Watch this carefully. You don't want to scorch the chocolate.

Dip one half of each apricot in the chocolate. Let the excess drip off.

Place the apricots onto wax paper and immediately sprinkle the pistachios over the chocolate-covered portions.

Place them in the refrigerator until the chocolate is set.
