Well, it's not really "red" but its sure is easy to throw together and so comforting on a cold day!

Serves 4-6

1 red pepper seeded and diced
1 red onion chopped
1 clove garlic, crushed
2 tbsp olive oil
1 can tomatoes, chopped
4 cups beef stock
1 cup cooked brown rice
2 tbsp Worcestershire sauce
1can red kidney beans, rinsed
1 tsp oregano
1 tsp marjoram
1 tsp Splenda
Salt and pepper to tatse

Put peppers, onion, garlic and oil in large pan. Saute until tender crisp.

Add the remaining ingredients and bring to the boil.

Stir well then cover and simmer for 15 mins.

Tatse for seasoning; garnish with a sprinkle fresh minced parsley and a little grated cheese.
